Line or pace deboning are used in many factories. The advantages are that not skilled butchers can be used, and trained to operate a number of cuts on the line in a short time.
The product arrives in one end, and passes by each operator, who performs 1-2 cuts. The trim is placed in trays located in front of the operator.
Machinery like derinders, saws or rib pullers can be fitted to the line. Each operator stand on an adjustable platform, so his working condition improves also ergonomically.
